~Homemade (sugar-free) Applesauce~
(yields 2- 16oz jars)
- 8 apples
- 3 Tbls honey
- 1 Tbl apple pie spice
- 1 c water
- juice 1 large lemon
Core apples, no need to peel. In a 3 qt or larger pot bring all ingredients to full boil. Reduce heat to med/low and simmer 2-3 hours. Remove pot from burner and rough mash. I like to use a potato masher for this step. Return to simmer till apples have reduced and desired consistency is reached.
Allow applesauce to cool then use an immersion blender to make your applesauce smoother. Allowing applesauce to cool is crucial! Plastic immersion blenders warp terribly when food is too hot…ooops!
Will keep in fridge a week if it lasts that long. Happy Cooking!
